Ingredients for the fresh chilli sauce

Crunchier

I call it “Thousand Island” because it’s pink and has mayonnaise in it, like the sauce it’s named after. The last time I tried the “real thing” was when I was about 10 years old, and this is what I remember. I think it had pickles in it too, but I think that’s optional if you want it to be a little crunchier.

  1. 1 cup cashews (soaked)
  2. 1/2 cup water (more water if you want a more liquid dressing)
  3. 1/8 cup red pepper
  4. one tbsp of cider vinegar
  5. 1 teaspoon of sweet paprika
  6. 1 small clove of garlic
  7. 1/2 teaspoon of salt
  8. Pinch of paprika, to taste (optional)
  9. Chopped cucumber (to taste)

Cashews

Soak the cashews in cold water for at least 2 hours or overnight. If you are in a hurry and don’t mind following this method because the cashews will no longer be raw, you can use boiling water to soften the cashews in just 5 minutes.
