Ingredients:
Lemon squash:
Sugar: 1 kg
Water:2 cups
Lemon slices: 2
Salt: 1 tsp
Lemon juice: 1 & 1/2 cup
Lemonade:
Prepared lemon squash: 2 or 3 tbs
Water: 1 cup
Cumin seeds: (roasted & crushed) 1/4 tsp
Black pepper powder :1/4 tsp
Black salt: 1/4 tsp
Mint margarita:
Ice cubes: as required
Mint leaves: 10-20 leaves
Black salt: 1/4 tsp
Prepared lemon squash: 5-6 tbs
Soda water: 500 ml
Cooking directions:
Add sugar & water, mix & cook until well dissolved. (4 to 5 minutes)
Add lemon slices & cook for 12-14 minutes
Add salt & mix well
Add lemon juice & cook for 2 minutes
Let it cool down
Mint Margarita: in a blender, add ice cubes, black salt, mint leaves & prepared lemon squash and soda water. Blend it well, then strain & serve.
Lemonade: in a jar, add lemon squash, water,
black salt, cumin seeds & black pepper, mix it very well & then serve chilled.

Mandi is a very healthy & delicious recipe to have in your Ramadan iftar recipe list. It is different from biriyani because it’s cooked and served Differently. The meat is cooked separately and then piled on the rice before it’s served.

Coriander seeds :1 tsp
Cumin seeds: 1 tsp
Cinnamon sticks :2-3 (Cloves)
Cloves 2-3
Green cardamom :3-4

Dried lemon ¼
Salt :1 tsp or to taste
Turmeric powder: ½ tsp
whole chicken with skin: 1 kg
cooking oil: ½ Cup
Onion slices: 1 medium
cooking oil: 2 tbsp
Almond: peeled 10-12
cooking oil: ¼ Cup
Green cardamom :3-4
Cinnamon sticks: 2-3
Cloves 2-3
Dried lemon 1
Onion: chopped 2 mediums
Raisins: ¼ Cup
Rice: basmati 1 & ½ Cups (soaked)
Water: lukewarm 3-4 Cups
Salt: ½ tbs
Charcoal: for smoke
Onion: fried
Fresh coriander
Mandi sauce:
Green chilies: 3-4
Garlic: cloves 2-3
Coriander seeds: ½ tsp
Salt: ½ tsp
Curry powder: 1 tsp
Fresh coriander: ¼ Cup
Lemon juice: 1 & ½ tbs
Tomatoes: 2 mediums
Water: 1-2 tbsp
Cooking directions:
In a mixer, add coriander seeds, cumin seeds, cinnamon sticks, cloves, green cardamom, saffron, lemon, salt, turmeric powder, grind well. Now In bowl, add whole chicken.
Therefore, now add whole ground spices and rub evenly on both sides, cover and let it marinate for 3 hours or overnight in a refrigerator.
In a pan, add cooking oil and onion, fry on low flame until golden brown. Now in a frying pan, add cooking oil and almonds, fry until golden. In a
pot, add cooking oil, cardamom, cinnamon sticks, cloves, lemon, and mix.
Add onion, mix and fry until golden. Turn off the flame, add raisins and mix. Such that, Add rice, lukewarm water, salt, and mix slowly. bake the marinated chicken in a preheated oven at 180 C for 1 hour. Give a charcoal smoke for 2 minutes.
For Mandi Sauce:
In a blender, add green chilies, garlic, coriander seeds, salt, curry powder, fresh coriander, lemon juice, tomatoes, water, and blend.
Serve mandi with mandi rice, mandi sauce, and garnish with fried onions and coriander.
Serve hot.

Paprika powder 1 tsp
Salt: ¼ tsp
Black pepper powder: 1 tsp
Onion paste: 1 & ½ tsp
Red chilli powder: a pinch
Burger bun
Mayonnaise
Cheese slice
Iceberg
Directions:
Add chicken thigh pieces and water, salt, vinegar in a bowl and mix well, cover it & let it rest for 2 hours.
Now add all-purpose flour, garlic powder, red chili powder in a bowl and mix.

Now coat marinated chicken pieces in a dry mixture, dip it into the water, and again coat it in flour mixture.
Heat cooking oil & fry chicken on low flame until golden brown.
Now mix paprika powder, salt, black pepper powder, red chili powder, garlic powder, cumin powder.
Now mix mayonnaise, hot sauce, tomato ketchup, mustard paste, and salt. Your burger sauce is ready.
